Guyot-pruned. Low yield per hectare. Attentive canopy management via green pruning and selective thinning; minimum necessary chemical treatments.

PROCESSING

Select Cortese grapes from our vineyards are transported to the cellar when correct level of ripeness is reached. Traditional white winemaking techniques follow a gentle pressing.
The free-run juice thus obtained is fermented at controlled temperatures in stainless steel vats with selected yeasts. Low added sulphur dioxide.

Excellent as an aperitif or as a companion to brunch; with first or second courses of fish and vegetables, poultry or pork, anything soused, delicate charcuterie (lardo, sweet prosciutto, cooked salame) and fresh or semi-ripe cheeses (both soft or stretched-curd).

STORAGE

The wine should be stored horizontally in a cool, (about 15°C) damp environment, out of direct sunlight.

Characteristics

A still wine with a pale, straw-yellow gleam, our 100% Cortese proffers delicate flower and fruit sensations with notes of linden blossom and peach. On the palate the wine is subtle, elegant and refined. Crisp and zesty, with a balanced and lingering finish.
